Ingredients
  

For the Cookie Dough
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder high-quality for rich flavor
  • 1 cup granulated sugar adjust sweetness as desired
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil can substitute with melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the Coating
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until thoroughly combined.
  3. In a separate large bowl, blend the granulated sugar and vegetable oil until smooth.
  4. Add the eggs to the sugar mixture one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until a soft dough forms.
  6. Cover the bowl with plastic wrap and allow the dough to sit for about 5 minutes, but there’s no need to chill!
Baking
  1. Using a cookie scoop or spoon, portion out the dough and roll each piece into a ball. Then roll each ball in powdered sugar until fully coated.
  2. Place the coated dough balls onto the prepared baking sheet, spaced about 2 inches apart.
  3. Bake in the preheated oven for 10-12 minutes, or until the cookies have a slightly cracked top. They will continue to cook a bit after being removed from the oven.
  4. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Adjust sweetness by reducing sugar by 1/4 cup. For a hint of peppermint, add a few drops of peppermint extract with the vanilla. Mix in chocolate chips for extra chocolatey flavor. Store cookies in an airtight container for up to a week or freeze for longer storage.
