Ingredients
  

For the Bars
  • 2 ripe bananas The riper, the sweeter!
  • 1 cup rolled oats Opt for gluten-free oats if needed.
  • 1/2 cup nut butter Such as almond or peanut butter for creaminess.
  • 1 teaspoon vanilla extract Pure is best for flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a large bowl, mash the ripe bananas with a fork until smooth. You want a creamy consistency with just a few small chunks for texture.
  3. Add the rolled oats to the mashed bananas and mix until completely combined.
  4. Stir in the nut butter and vanilla extract until you achieve a homogenous, thick batter.
  5. Pour the mixture into the prepared baking dish and spread it evenly, pressing it down firmly with the back of a spatula.
Baking
  1. Bake for 20-25 minutes, or until the edges turn golden-brown and the center feels set to the touch.
  2. Remove from the oven and allow the bars to cool in the dish for about 10 minutes before transferring to a wire rack to cool completely.
  3. Once cooled, cut into squares or bars and serve!

Notes

These bars can be kept in an airtight container at room temperature for about 3 days or in the refrigerator for up to a week. For longer storage, freeze the bars, wrapped individually, for up to 3 months.
