Preparation
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a large bowl, mash the ripe bananas with a fork until smooth. You want a creamy consistency with just a few small chunks for texture.
- Add the rolled oats to the mashed bananas and mix until completely combined.
- Stir in the nut butter and vanilla extract until you achieve a homogenous, thick batter.
- Pour the mixture into the prepared baking dish and spread it evenly, pressing it down firmly with the back of a spatula.
Baking
- Bake for 20-25 minutes, or until the edges turn golden-brown and the center feels set to the touch.
- Remove from the oven and allow the bars to cool in the dish for about 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, cut into squares or bars and serve!
Notes
These bars can be kept in an airtight container at room temperature for about 3 days or in the refrigerator for up to a week. For longer storage, freeze the bars, wrapped individually, for up to 3 months.
