Air Fryer Sugar Cookies

Ingredients
  

For the Cookies
  • 1 cup all-purpose flour (sifted for lightness) Can substitute with whole wheat or gluten-free flour.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter (softened but not melted) Substitute with coconut oil for a dairy-free option.
  • 1/2 cup granulated sugar For sweetness.
  • 1/2 teaspoon vanilla extract For flavor.
  • 1 piece egg To bind the ingredients together.

Preparation
  1. In a mixing bowl, combine 1 cup of sifted flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
  2. In another bowl, crack 1 egg and add 1/4 cup of softened butter and 1/2 cup of granulated sugar. Using a hand mixer or whisk, beat until light and fluffy, about 2-3 minutes.
  3. Gradually fold the dry ingredients into the butter-sugar mixture while adding 1/2 teaspoon of vanilla extract. Stir just until combined; don’t overmix.
Cooking
  1. Preheat your air fryer to 320°F (160°C) for about 5 minutes.
  2. Scoop out tablespoon-sized portions of dough and shape them into rounds. Optionally, roll in extra sugar or add sprinkles.
  3. Arrange the cookies in the air fryer basket, leaving space between them. Air fry for 6-8 minutes or until the edges turn golden and the centers look slightly puffed.
  4. Once finished, carefully remove and let cool for a few minutes on a wire rack.

Notes

For softer cookies, chill the dough for about 15-20 minutes before shaping. Don't overcrowd the air fryer for even baking. Store leftovers in an airtight container at room temperature for up to 4 days or freeze for a month.
