Preparation
- In a mixing bowl, combine 1 cup of sifted flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Set aside.
- In another bowl, crack 1 egg and add 1/4 cup of softened butter and 1/2 cup of granulated sugar. Using a hand mixer or whisk, beat until light and fluffy, about 2-3 minutes.
- Gradually fold the dry ingredients into the butter-sugar mixture while adding 1/2 teaspoon of vanilla extract. Stir just until combined; don’t overmix.
Cooking
- Preheat your air fryer to 320°F (160°C) for about 5 minutes.
- Scoop out tablespoon-sized portions of dough and shape them into rounds. Optionally, roll in extra sugar or add sprinkles.
- Arrange the cookies in the air fryer basket, leaving space between them. Air fry for 6-8 minutes or until the edges turn golden and the centers look slightly puffed.
- Once finished, carefully remove and let cool for a few minutes on a wire rack.
Notes
For softer cookies, chill the dough for about 15-20 minutes before shaping. Don't overcrowd the air fryer for even baking. Store leftovers in an airtight container at room temperature for up to 4 days or freeze for a month.
