Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture into the bottom of a greased 9×13-inch baking dish. Bake for 10 minutes and remove it from the oven.
- In a large bowl, beat the softened cream cheese with the sugar and vanilla extract until smooth. Add the eggs, one at a time, mixing well after each addition. Pour this creamy mixture over the prepared crust, spreading it evenly.
- In another bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice until well coated. Layer them over the cream cheese filling.
- In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and melted butter. Stir until combined and crumbly. Spread this topping evenly over the apple layer.
- Bake for 45-50 minutes or until the topping is golden and the filling is slightly set. Let your dessert cool in the pan for at least 30 minutes before slicing into bars.
- Serve slightly warm or chilled, with a scoop of vanilla ice cream on top if desired.
