Ingredients
  

For the Crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
For the Cheesecake Filling
  • 16 oz 16 oz (2 packages) cream cheese, softened
  • 1 cups 1 cup granulated sugar
  • 0.75 teaspoons ¾ teaspoon vanilla extract
  • 2 large 2 large eggs
For the Apple Filling
  • 4 cups 4 cups apples, peeled, cored, and sliced (Granny Smith works well)
  • 0.5 cups ½ cup brown sugar
  • 1 teaspoon 1 teaspoon cinnamon
  • 1 tablespoon 1 tablespoon lemon juice
For the Topping
  • 1 cups 1 cup rolled oats
  • 0.5 cups ½ cup all-purpose flour
  • 0.5 cups ½ cup brown sugar
  • 0.5 teaspoon ½ teaspoon cinnamon
  • 0.5 cups ½ cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture into the bottom of a greased 9×13-inch baking dish. Bake for 10 minutes and remove it from the oven.
  3. In a large bowl, beat the softened cream cheese with the sugar and vanilla extract until smooth. Add the eggs, one at a time, mixing well after each addition. Pour this creamy mixture over the prepared crust, spreading it evenly.
  4. In another bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice until well coated. Layer them over the cream cheese filling.
  5. In a separate bowl, mix the oats, flour, brown sugar, cinnamon, and melted butter. Stir until combined and crumbly. Spread this topping evenly over the apple layer.
  6. Bake for 45-50 minutes or until the topping is golden and the filling is slightly set. Let your dessert cool in the pan for at least 30 minutes before slicing into bars.
  7. Serve slightly warm or chilled, with a scoop of vanilla ice cream on top if desired.

Notes

Make sure to use fresh apples for the best flavor and texture. For a plant-based version, substitute cream cheese with a dairy-free alternative. Store leftovers in the refrigerator for up to 5 days, or freeze for up to 2 months.
