Preparation
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, ensuring the cake releases easily after baking.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon for the cake. Set aside.
- In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix just until combined. The batter will be slightly lumpy – this is perfect!
- Peel, core, and slice the apples into thin wedges. Toss them with lemon juice, brown sugar, and cinnamon in a separate bowl.
- Fold the apple mixture into the batter gently, ensuring the apples are evenly distributed.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
Crumb Topping
- For the crumb topping, in a bowl, mix flour, brown sugar, and cinnamon. Add the cold cubed butter and use a pastry cutter or your fingers to mix until crumbly.
- Sprinkle the crumb topping evenly over the cake batter.
Baking
- Bake in the preheated oven for 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Drizzle & Serving
- While the cake is cooling, prepare the Cinnamon Apple Drizzle by whisking together powdered sugar, milk, and cinnamon in a small bowl until smooth.
- Once the cake has cooled slightly, drizzle your cinnamon mixture over the top and slice to serve. Enjoy!
Notes
Tips: Experiment with different apples for depth of flavor. Consider gluten-free flour for a gluten-free option or use almond milk and coconut oil for a dairy-free version. Store leftovers in an airtight container at room temperature for up to three days or in the fridge for a week. Reheat in the microwave for best results.
