Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon freshly ground is best
  • 1/2 cup unsalted butter melted
  • 1 cup buttermilk can substitute with regular or dairy-free milk
  • 2 large eggs
  • 1 tsp vanilla extract
For the Apples
  • 3 medium apples Granny Smith or Honeycrisp works beautifully
  • 1 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
For the Crumb Topping
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup unsalted butter cold, cubed
For the Cinnamon Apple Drizzle
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, ensuring the cake releases easily after baking.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon for the cake. Set aside.
  3. In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined. The batter will be slightly lumpy – this is perfect!
  5. Peel, core, and slice the apples into thin wedges. Toss them with lemon juice, brown sugar, and cinnamon in a separate bowl.
  6. Fold the apple mixture into the batter gently, ensuring the apples are evenly distributed.
  7. Pour the batter into the prepared baking pan, smoothing the top with a spatula.
Crumb Topping
  1. For the crumb topping, in a bowl, mix flour, brown sugar, and cinnamon. Add the cold cubed butter and use a pastry cutter or your fingers to mix until crumbly.
  2. Sprinkle the crumb topping evenly over the cake batter.
Baking
  1. Bake in the preheated oven for 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Drizzle & Serving
  1. While the cake is cooling, prepare the Cinnamon Apple Drizzle by whisking together powdered sugar, milk, and cinnamon in a small bowl until smooth.
  2. Once the cake has cooled slightly, drizzle your cinnamon mixture over the top and slice to serve. Enjoy!
