Ingredients
  

For the Donuts
  • 1 cup all-purpose flour Can substitute with almond flour for a gluten-free option.
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 large egg
  • 1/2 cup buttermilk Or use milk mixed with 1/2 tablespoon vinegar.
  • 1/4 cup unsweetened applesauce
  • 1 cup diced apples Peeled and cored, use Granny Smith or Honeycrisp for best flavor.
For the Topping
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • a pinch cinnamon

Method
 

Preparation
  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon. Mix until well blended.
  3. In another bowl, whisk together the egg, buttermilk, applesauce, and diced apples until combined.
  4. Add the wet ingredients to the dry mixture and stir gently until just combined; be careful not to over-mix. The batter should be slightly lumpy.
Cooking
  1. Grease your waffle iron with a little cooking spray or butter to prevent sticking.
  2. Pour an appropriate amount of batter into the waffle iron (about 1/3 cup, depending on the size of your waffle maker) and close it.
  3. Cook until golden brown, usually about 3–5 minutes. Look for a crispy exterior and an inviting aroma!
  4. Carefully remove the waffle donuts and set them on a wire rack.
Finishing Touch
  1. In a medium bowl, mix powdered sugar, milk, vanilla extract, and a pinch of cinnamon until smooth. Drizzle or dip your warm waffle donuts into the glaze.

Notes

You can add nutmeg or ginger for extra spice. These donuts may also be made healthier by using whole wheat flour or substituting Greek yogurt for applesauce. Store leftovers in an airtight container at room temperature for up to two days or freeze for later.
