Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts Ideally free-range for better flavor
  • 1 cup all-purpose flour Can substitute with almond flour for a gluten-free option
  • 2 large eggs
  • 1 cup breadcrumbs Regular or panko for extra crunch
  • 1/2 cup grated Parmesan cheese Freshly grated gives the best flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 2 cups marinara sauce Store-bought or homemade, use fresh ingredients for best results
  • 1/2 teaspoon red pepper flakes Optional, for a kick
For the Topping
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil leaves Optional, but they add a lovely aroma

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel and season lightly with salt and pepper.
  3. Set up a breading station with flour in one shallow dish, beaten eggs in another, and a mixture of breadcrumbs, garlic powder, Italian seasoning, and grated Parmesan in a third dish.
  4. Dredge each chicken breast in flour, dip into the beaten eggs, and coat with the breadcrumb mixture, pressing firmly to adhere.
  5. Place the breaded chicken breasts on a greased baking sheet, ensuring they are not overcrowded.
Cooking
  1. Bake the chicken for 20-25 minutes, or until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
  2. Remove the chicken from the oven, spoon marinara sauce over each piece, and sprinkle with shredded mozzarella cheese.
  3. Return to the oven and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  4. Remove from the oven, let cool for a few minutes, and garnish with fresh basil before serving.

Notes

For an extra crispy chicken, try double breading by repeating the egg and breadcrumb steps. You can store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for the best texture.
