Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken breasts, diced into bite-sized pieces Opt for high-quality chicken for the best flavors.
  • 1 tablespoon olive oil
  • to taste Salt and pepper
For the Sauce
  • ½ cup mayonnaise You can substitute with Greek yogurt for a lighter option.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha Adjust to taste.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice
For the Bowl
  • 2 cups cooked rice (brown or white)
  • 1 cup shredded cabbage (green or purple)
  • 1 medium red bell pepper, sliced
  • 1 cup snap peas
  • to taste Fresh cilantro, for garnish
  • to taste Lime wedges, for serving

Method
 

Cooking the Chicken
  1. Heat the olive oil in a large skillet over medium-high heat. Season the diced chicken with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink and is cooked through.
Preparing the Sauce
  1. While the chicken is cooking, prepare the Bang Bang sauce. In a medium bowl, mix the mayonnaise, sweet chili sauce, sriracha, garlic powder, and lime juice until everything is well combined and smooth.
Combining Chicken and Sauce
  1. Once the chicken is cooked, pour the sauce over the chicken in the skillet. Stir until the chicken is fully coated and heated through, about 2 more minutes.
Assembling the Bowl
  1. To assemble the bowls, start with a base of cooked rice. Top the rice with the saucy chicken, followed by the shredded cabbage, sliced bell pepper, and snap peas.
  2. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the top.

Notes

For added texture, toss in some chopped peanuts or sesame seeds. Store any leftover chicken and veggies in an airtight container in the refrigerator for up to 3 days.
