Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the smoked paprika, garlic powder, black pepper, and salt. Rub this spice mixture all over the chicken breasts.
Cooking
- Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breast and sear for about 5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for another 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- While the chicken is baking, mix together the barbecue sauce, honey, and apple cider vinegar in a small pot over low heat. Stir until combined and warmed through, which should take around 5-7 minutes.
Assembly
- Once the chicken is cooked, let it rest for a few minutes before shredding it with two forks. Toss the shredded chicken in the warm barbecue sauce mixture to coat evenly.
- Slice the sandwich rolls in half. Layer with the sauced chicken, followed by coleslaw, dill pickles, and any other toppings you desire.
