Preparation
- Place the fresh blueberries (or thawed frozen ones) in a small bowl. Use a fork to gently mash them until they release their juices. Set aside for about 10 minutes; this will intensify their flavor.
- In a mixing bowl, beat 8 oz of softened cream cheese and 1/4 cup of softened unsalted butter together using an electric mixer. Mix on medium speed for about 2-3 minutes until the mixture is fluffy and well combined.
- Gradually add in the 2 cups of sifted powdered sugar and keep mixing on low speed to avoid a sugar cloud!
- Once the powdered sugar is fully incorporated, stir in the mashed blueberries, 1 teaspoon of vanilla extract, and a pinch of salt. Continue to beat the mixture on medium speed until fully combined and smooth.
- Taste the frosting and adjust sweetness if necessary by adding more powdered sugar. If you’d like a more intense blueberry flavor, fold in additional mashed blueberries.
- Use immediately or store in the fridge for later use. When you’re ready, spread the frosting over your favorite cakes or cupcakes using a spatula for a rustic look.
