Ingredients
  

For the Frosting
  • 8 oz cream cheese, softened Make sure it’s at room temperature for easy mixing
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted To avoid lumps
  • 1/2 cup fresh blueberries (or use frozen, thawed) Strain them to reduce excess moisture if desired
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. Place the fresh blueberries (or thawed frozen ones) in a small bowl. Use a fork to gently mash them until they release their juices. Set aside for about 10 minutes; this will intensify their flavor.
  2. In a mixing bowl, beat 8 oz of softened cream cheese and 1/4 cup of softened unsalted butter together using an electric mixer. Mix on medium speed for about 2-3 minutes until the mixture is fluffy and well combined.
  3. Gradually add in the 2 cups of sifted powdered sugar and keep mixing on low speed to avoid a sugar cloud!
  4. Once the powdered sugar is fully incorporated, stir in the mashed blueberries, 1 teaspoon of vanilla extract, and a pinch of salt. Continue to beat the mixture on medium speed until fully combined and smooth.
  5. Taste the frosting and adjust sweetness if necessary by adding more powdered sugar. If you’d like a more intense blueberry flavor, fold in additional mashed blueberries.
  6. Use immediately or store in the fridge for later use. When you’re ready, spread the frosting over your favorite cakes or cupcakes using a spatula for a rustic look.
