Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, salt, and baking powder. The mixture should appear smooth and chocolatey.
- In a separate bowl, combine the eggs, melted butter, and vanilla. Make sure the butter isn’t too hot, as it could cook the eggs.
- Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix—it should still be a bit lumpy.
- If using, stir in the chocolate chips and nuts. These add an extra layer of flavor and texture.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay). The top should look set and slightly cracked.
- Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness. You can freeze Brownie Bread for up to 3 months. Thaw it overnight in the fridge before enjoying. Avoid overmixing the batter, which can lead to a dense texture.
