Ingredients
  

For the Brownie Base
  • 1 cup all-purpose flour (use gluten-free flour if desired)
  • 1 cup granulated sugar (brown sugar adds moisture and flavor)
  • 1/2 cup unsweetened cocoa powder (look for high-quality Dutch-process for richness)
  • 1/4 teaspoon salt (to enhance sweetness)
  • 1/2 teaspoon baking powder (for a little lift)
  • 3 large eggs (room temperature for better blending)
  • 1/2 cup unsalted butter, melted (you can use coconut oil for a dairy-free version)
  • 1 teaspoon vanilla extract (homemade vanilla adds depth)
For the Optional Add-Ins
  • 1/2 cup chocolate chips (use semi-sweet or dark, based on preference)
  • 1/2 cup chopped nuts (walnuts or pecans for added crunch)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, salt, and baking powder. The mixture should appear smooth and chocolatey.
  3. In a separate bowl, combine the eggs, melted butter, and vanilla. Make sure the butter isn’t too hot, as it could cook the eggs.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix—it should still be a bit lumpy.
  5. If using, stir in the chocolate chips and nuts. These add an extra layer of flavor and texture.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay). The top should look set and slightly cracked.
  2. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness. You can freeze Brownie Bread for up to 3 months. Thaw it overnight in the fridge before enjoying. Avoid overmixing the batter, which can lead to a dense texture.
