Ingredients
  

For the Meatballs
  • 1 pound ground beef or ground turkey for a leaner option
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup diced onion
  • 1 large egg
  • 2 tablespoons chopped fresh parsley or 1 tablespoon dried parsley
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the BBQ Sauce
  • 1 cup BBQ sauce store-bought or homemade
  • 1 tablespoon honey for extra sweetness
For the Biscuit Topping
  • 2 cans refrigerated biscuit dough flaky or buttermilk
  • 1 cup shredded cheddar cheese or your favorite cheese

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick spray or a little oil.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, egg, parsley, garlic powder, salt, and pepper. Mix until just combined.
  3. Roll the mixture into small meatballs, about 1 inch in diameter, and place them evenly in the prepared baking dish.
Assembly
  1. In a small bowl, mix together the BBQ sauce and honey. Pour half of the sauce over the meatballs, making sure they are well coated.
  2. Open the cans of biscuit dough and separate the biscuits. Cut each biscuit into quarters and scatter them over the top of the meatballs.
  3. Drizzle the remaining BBQ sauce over the biscuits, then sprinkle the shredded cheddar cheese on top.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until the biscuits are golden brown and the meatballs are cooked through (internal temperature should reach 160°F or 70°C).
  2. Remove from oven and let it cool slightly before serving. Enjoy the delicious aromas wafting through your home!

Notes

For a kick, add a teaspoon of smoked paprika or cayenne pepper to the meatball mixture.
