Preparation
- Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick spray or a little oil.
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, onion, egg, parsley, garlic powder, salt, and pepper. Mix until just combined.
- Roll the mixture into small meatballs, about 1 inch in diameter, and place them evenly in the prepared baking dish.
Assembly
- In a small bowl, mix together the BBQ sauce and honey. Pour half of the sauce over the meatballs, making sure they are well coated.
- Open the cans of biscuit dough and separate the biscuits. Cut each biscuit into quarters and scatter them over the top of the meatballs.
- Drizzle the remaining BBQ sauce over the biscuits, then sprinkle the shredded cheddar cheese on top.
Baking
- Bake in the preheated oven for about 25-30 minutes, or until the biscuits are golden brown and the meatballs are cooked through (internal temperature should reach 160°F or 70°C).
- Remove from oven and let it cool slightly before serving. Enjoy the delicious aromas wafting through your home!
Notes
For a kick, add a teaspoon of smoked paprika or cayenne pepper to the meatball mixture. Substitute the meat with plant-based meat alternatives or black beans blended with breadcrumbs for a vegetarian option. Leftovers can be stored in an airtight container in the fridge for up to three days, and they also freeze beautifully for up to a month.
