  • 1 lb ground beef
  • 1 tablespoon olive oil For cooking
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tablespoon fresh parsley, chopped For garnish

Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  3. Add the chopped onion and minced garlic to the skillet and cook for 3-4 minutes, until the onion is softened and fragrant.
  4. Add the diced potatoes and season with salt, pepper, paprika, and dried oregano. Stir to combine.
  5. Pour in the beef broth and cover the skillet. Reduce the heat to low and cook for 20-25 minutes, until the potatoes are tender and the liquid has mostly absorbed.
  6. Sprinkle the shredded cheddar cheese over the beef and potatoes. Cover again and cook for 2-3 minutes, until the cheese has melted.
  7. Garnish with freshly chopped parsley before serving.

Notes

Serve hot from the skillet for a homey presentation. Pairs well with a green salad or steamed veggies. Works great for meal prep, portioning for easy lunches throughout the week. For extra flavor, add chili flakes or try different cheeses.
