Method
Cooking the Beef and Rice
- Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned.
- Drain off grease, then stir in the cream of mushroom soup, diced tomatoes, and uncooked rice.
- Cover, and simmer over low heat, stirring occasionally, until the rice is cooked, about 15 minutes.
Broiling
- Preheat the oven's broiler.
- Once the rice is done cooking, transfer the contents of the skillet to a casserole dish.
- Cover with a layer of mozzarella cheese.
- Broil until the cheese is melted and toasty.
Serving
- Season with salt and pepper to taste, and enjoy!

Serve hot with a side salad or some crusty bread. For storage, keep in the refrigerator for up to three days in an airtight container.
