Main Ingredients
  • 1 pound ground beef Juicy and flavorful meat.
  • 1 can (10.75 ounce) cream of mushroom soup For creaminess.
  • 1 can (14.5 ounce) diced tomatoes with juice Adds flavor and moisture.
  • 0.5 cup long grain white rice Uncooked.
  • 0.75 cup shredded mozzarella cheese For topping.
  • to taste Salt and pepper For seasoning.

Method
 

Cooking the Beef and Rice
  1. Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned.
  2. Drain off grease, then stir in the cream of mushroom soup, diced tomatoes, and uncooked rice.
  3. Cover, and simmer over low heat, stirring occasionally, until the rice is cooked, about 15 minutes.
Broiling
  1. Preheat the oven's broiler.
  2. Once the rice is done cooking, transfer the contents of the skillet to a casserole dish.
  3. Cover with a layer of mozzarella cheese.
  4. Broil until the cheese is melted and toasty.
Serving
  1. Season with salt and pepper to taste, and enjoy!

Notes

Serve hot with a side salad or some crusty bread. For storage, keep in the refrigerator for up to three days in an airtight container.
