Preparation
- In a medium-sized mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix with a hand mixer until smooth and creamy.
- Gently fold in the cherry pie filling and lemon juice. The filling should be sweet with a hint of brightness from the lemon.
Assembly
- Lay an egg roll wrapper flat on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the wrapper, slightly off-center.
- Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with a bit of water. Repeat with the remaining wrappers and filling.
Cooking
- Set your air fryer to 350°F (175°C) and allow it to preheat for about 5 minutes.
- Lightly spray the egg rolls with cooking spray to help them crisp up. Arrange the rolls in a single layer in the air fryer basket.
- Air fry for 10–12 minutes, or until golden brown and crispy, checking halfway through and shaking the basket for even cooking.
- Once done, allow the egg rolls to cool slightly before serving. Enjoy them on their own or dusted with powdered sugar.
Notes
Use quality ingredients for best flavor. You can prepare the egg rolls ahead of time and refrigerate them. Do not overcrowd the air fryer basket for even cooking. Consider adding chocolate chips or almond extract for variations.
