Ingredients
  

For the Casserole
  • 2 cups cooked chicken, shredded or diced Use organic or free-range for best quality.
  • 3 cups fresh spinach, chopped Fresh organic spinach is recommended.
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup Greek yogurt or sour cream Greek yogurt can be used as a healthier alternative.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For the Topping
  • 1 cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a bit of cooking spray or olive oil.
  2. In a large bowl, mix the softened cream cheese, Greek yogurt (or sour cream), garlic powder, onion powder, salt, and pepper until smooth and creamy.
  3. Fold in the cooked chicken and chopped spinach into the cream cheese mixture. Ensure the greens and proteins are evenly coated.
  4. Spread the mixture evenly into the prepared baking dish.
  5. In another bowl, combine the breadcrumbs, grated Parmesan, and olive oil, mixing them until the crumbs are nicely coated.
  6. Sprinkle the breadcrumb topping evenly over the chicken and spinach mixture in the baking dish.
Cooking
  1. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  2. Once done, remove it from the oven and let it sit for about 5-10 minutes before serving to allow the flavors to meld beautifully.

Notes

For a flavor boost, consider adding fresh herbs like thyme or basil. This casserole can be refrigerated unbaked a day in advance or frozen for up to three months.
