- Begin by cooking the pasta. In a large pot of salted boiling water, add the rotini pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.
- While the pasta is cooking, prepare the chicken. If using rotisserie chicken, simply shred or dice the meat. For grilled chicken breast, season with salt and pepper and grill or cook in a skillet over medium-high heat until cooked through, about 6-7 minutes per side. Once done, let it rest for a few minutes before dicing into bite-sized pieces.
- In a large mixing bowl, combine the cooked and cooled pasta, diced chicken, chopped romaine, and cherry tomatoes. Toss gently to mix the ingredients well.
- In a separate small bowl, whisk together the Caesar dressing, lemon juice, garlic powder, and a pinch of salt and pepper. Adjust the seasoning to your liking.
- Pour the dressing over the pasta and chicken mixture and toss to coat everything evenly. Ensure that every piece is well-dressed.
- Finally, sprinkle the grated Parmesan cheese on top and give it one last gentle toss.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together beautifully.
