Ingredients

For the Beef
  • 1 pound beef sirloin, thinly sliced against the grain for tenderness
  • 1 tablespoon soy sauce use low-sodium for a healthier option
  • 1 teaspoon cornstarch helps to tenderize the beef
For the Stir Fry
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced for a burst of flavor
  • 1 tablespoon fresh ginger, minced optional, for extra warmth
For the Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce adds depth
  • 1 tablespoon rice vinegar for a touch of acidity
  • 1 teaspoon sugar balances the flavors
  • 1 tablespoon sesame oil for richness
  • Cracked black pepper to taste

Method

Preparation
  1. In a bowl, combine the beef with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Mix well and let it marinate for about 10 minutes.
  2. While the beef is marinating, prepare the sauce by mixing 3 tablespoons of soy sauce, oyster sauce, rice vinegar, sugar, sesame oil, and black pepper in a small bowl. Set aside.
Cooking
  1. Heat a large skillet or wok over medium-high heat and add a splash of oil. Once hot, add the marinated beef in batches, allowing it to sear without overcrowding the pan. Cook for about 2-3 minutes until browned, then remove and set aside.
  2. In the same skillet, add another splash of oil, then toss in the sliced onions. Sauté for 3-4 minutes until they become soft and slightly caramelized.
  3. Add minced garlic and ginger to the onions, stirring frequently for about 30 seconds until aromatic.
  4. Return the cooked beef to the skillet, pour the sauce over the mixture, and toss everything together. Cook for another 2-3 minutes until heated through and the sauce thickens slightly.
  5. Serve hot over steamed rice or noodles for a truly authentic experience.

Notes

Choose the Right Beef: Always slice against the grain for tender pieces. Don’t Overcook the Onions: Aim for a balance between tenderness and crunch. Add Vegetables: Consider bell peppers, broccoli, or snap peas for extra nutrition. Make it Spicy: Add red pepper flakes or fresh chilies for a kick. Make Ahead: You can marinate the beef and chop vegetables in advance for quick prep. Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a hot skillet or microwave.
