Preparation
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Blend until smooth.
- Scoop spoonfuls of dough, roll them into balls, and place them 2 inches apart on the baking sheets.
- Gently press each ball with a fork in a crisscross pattern.
- Bake for 10-12 minutes, until the edges are golden but the center remains soft.
- Let cookies cool on the baking sheet for a few minutes.
Chocolate Drizzle
- In a microwave-safe bowl, combine chocolate chips and vegetable oil. Heat for 20-30 seconds and stir until smooth.
- Drizzle the melted chocolate over the cooled cookies and let it set before serving.
Notes
For a healthier option, substitute sugar with coconut sugar. Refrigerate dough for easier handling if too soft. Store cookies in an airtight container at room temperature for up to a week or freeze for three months.
