Ingredients
  

For the Cookies
  • 1 cup creamy peanut butter choose a natural or freshly ground variety for the best flavor
  • 1 cup granulated sugar or substitute with coconut sugar or a sugar alternative
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
For the Chocolate Drizzle
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon vegetable oil to help the chocolate drizzle smoothly

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Blend until smooth.
  3. Scoop spoonfuls of dough, roll them into balls, and place them 2 inches apart on the baking sheets.
  4. Gently press each ball with a fork in a crisscross pattern.
  5. Bake for 10-12 minutes, until the edges are golden but the center remains soft.
  6. Let cookies cool on the baking sheet for a few minutes.
Chocolate Drizzle
  1. In a microwave-safe bowl, combine chocolate chips and vegetable oil. Heat for 20-30 seconds and stir until smooth.
  2. Drizzle the melted chocolate over the cooled cookies and let it set before serving.

Notes

For a healthier option, substitute sugar with coconut sugar. Refrigerate dough for easier handling if too soft. Store cookies in an airtight container at room temperature for up to a week or freeze for three months.
