Cinnamon Rolls with Apple Pie Filling

Ingredients
  

For the Dough
  • 4 cups all-purpose flour (plus extra for dusting)
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup whole milk (warm)
  • 1/3 cup unsalted butter (melted)
  • 1 large egg
For the Apple Pie Filling
  • 2 cups peeled and diced apples (about 2 medium apples) Use Granny Smith or Honeycrisp for best flavor.
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
For the Topping
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Method
 

Preparation and Dough Rising
  1. In a large mixing bowl, combine the warm milk, granulated sugar, and yeast. Let it sit for about 5 minutes until bubbly.
  2. Add the melted butter, egg, and salt into the yeast mixture. Gradually add in the flour, mixing until a dough forms.
  3. Transfer the dough to a floured surface. Knead for about 5-7 minutes until it’s smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Filling Preparation and Rolling
  1. While the dough rises, in a medium bowl, toss diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well coated.
  2. Once risen, punch down the dough and roll it out on a floured surface into a rectangle about 1/4-inch thick.
  3. Evenly spread the apple filling over the dough, leaving a small border around the edges.
  4. Starting from one long edge, tightly roll the dough into a log. Slice the log into 1 to 1.5-inch thick rolls.
  5. Place the rolls cut-side up in a greased baking dish. Cover and let rise for another 30 minutes.
Baking and Glazing
  1. Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until golden brown.
  2. While the rolls are baking, whisk together powdered sugar, milk, and vanilla until smooth.
  3. Once done, remove the rolls from the oven and drizzle the glaze over the top while still warm. Enjoy!

Notes

You can use store-bought apple pie filling if you’re short on time. For a gluten-free option, substitute all-purpose flour with a 1:1 gluten-free flour blend.
