Classic S’mores Bars

Ingredients
  

For the Base
  • 1 cup unsalted butter, melted Use unsalted butter for better control over salt levels.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour For a gluten-free option, substitute with gluten-free flour.
  • 1 cup graham cracker crumbs Or use digestive biscuits if unavailable.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
For the Filling
  • 1 cup milk chocolate chips Or use semi-sweet for a richer taste.
  • 2 cups mini marshmallows Consider toasting for added flavor.
  • 1/2 cup chopped chocolate bars Optional for additional chocolate flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine melted butter, brown sugar, and granulated sugar. Stir until well blended.
  3. Add the eggs and vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together all-purpose flour, graham cracker crumbs, baking powder, and salt. Gradually incorporate this mixture into the wet ingredients, mixing until just combined.
  5. Spread half of the dough into the bottom of a greased 9x13 inch baking dish, pressing it evenly to create a solid base.
  6. Evenly sprinkle the milk chocolate chips and mini marshmallows over the base. If desired, add chopped chocolate bars.
  7. Dollop the remaining dough on top of the filling, spreading it gently to cover it as best as you can.
  8. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the bars are set.
  9. Allow the bars to cool in the dish for at least 20 minutes before cutting them into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For gluten-free, substitute with gluten-free flour and graham cracker alternatives.
