Ingredients
  

For the Soup Base
  • 1 pound boneless, skinless chicken thighs, diced
  • 1 tablespoon coconut oil (or any oil of your choice)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 ounces) coconut milk
  • 4 cups chicken or vegetable broth
  • 2 cups mixed vegetables (carrots, bell peppers, etc.)

For the Garnish
  • 1/2 cup fresh cilantro, chopped
  • 1 unit lime wedges

Preparation
  1. In a large pot, heat the coconut oil over medium heat. The oil should shimmer but not smoke.
  2. Add the chopped onion, sautéing for about 5 minutes until it's soft and translucent. Stir in the garlic and ginger, cooking for an additional minute until fragrant.
  3. Add the diced chicken to the pot, cooking for around 5-7 minutes until the chicken is no longer pink.
  4. Sprinkle the curry powder over the chicken mixture, stirring to coat well. Allow it to cook for about 2 minutes to deepen the flavors.
  5. Add the coconut milk and broth, stirring to combine. Bring the mixture to a gentle simmer.
  6. Once simmering, add the mixed vegetables. Allow everything to simmer for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Ladle the soup into bowls, garnishing with fresh cilantro and lime wedges. Sprinkle red chili flakes for an added kick, if desired.
