Ingredients
  

For the Cookies
  • 1 cup cookie butter (preferably a creamy variety for best texture) Using a high-quality brand is recommended for flavor.
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can use gluten-free all-purpose flour if needed.
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together cookie butter and softened butter until creamy, about 2-3 minutes.
  3. Add brown sugar, egg, and vanilla extract, and mix until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually incorporate dry ingredients into wet ingredients, stirring just until combined.
  6. Drop rounded balls of cookie dough onto the prepared baking sheet, leaving about 2 inches of space.
Baking
  1. Bake in the preheated oven for 10-12 minutes until edges are lightly golden and centers appear soft.
  2. Allow to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze for up to 3 months. You can also add chocolate chips or chopped nuts for extra flavor.
