Ingredients
  

For the Toast
  • 2 slices whole-grain or sourdough bread choose sturdy bread for best texture
  • 1-2 tsp olive oil or butter for brushing (optional)
For the Creamy Layer
  • 1 cup low-fat or full-fat cottage cheese use small-curd for smoother texture
  • 1 pinch kosher salt
  • 1 pinch black pepper freshly ground
For the Avocado & Toppings
  • 1 whole ripe avocado about 150–180 g, peeled and sliced or mashed
  • 1 small lemon or lime zest and 1 tsp juice
  • 1/4 tsp smoked paprika (optional)
  • 1-2 tbsp chopped fresh herbs (chives, parsley, or cilantro)
  • 1 pinch flaky sea salt
  • 1 pinch black pepper freshly ground
For the Hot Honey Drizzle
  • 2 tbsp honey
  • 1/2-1 tsp chili flakes or a teaspoon of chili-infused oil (adjust to spice tolerance)
  • 1 small splash apple cider vinegar (optional, to balance sweetness)

Method
 

Toast the Bread
  1. Preheat your toaster or oven to 375°F (190°C) if using the oven.
  2. Brush the bread lightly with olive oil or butter and toast until golden and crisp around the edges.
Prepare the Cottage Cheese Base
  1. In a small bowl, stir the cottage cheese with a pinch of salt and a few grinds of black pepper.
  2. Whip quickly with a fork until velvety for a creamier spread.
Season the Avocado
  1. Slice or mash the avocado and toss with the lemon or lime juice, a little zest, and smoked paprika if using.
Make the Hot Honey
  1. Warm the honey briefly in a small saucepan or microwave until slightly runnier, not boiling.
  2. Stir in chili flakes or chili oil and a tiny splash of vinegar if desired.
Assemble the Toast
  1. Spread a generous layer of cottage cheese over each toast.
  2. Top with avocado slices or a spoonful of mashed avocado.
  3. Sprinkle with herbs, flaky sea salt, and cracked black pepper.
Finish with Hot Honey
  1. Drizzle the hot honey lightly over each toast.
Serve Immediately
  1. Serve while the toast is still crisp to preserve the contrast of textures.

Notes

For dairy-free, substitute Greek-style plant-based yogurt for cottage cheese. For lower carb, use toasted portobello caps or grilled eggplant instead of bread. Freshness matters: ripe avocado should give slightly when pressed; cottage cheese should smell clean and mild.
