For the Filling
  • 8 ounces brie cheese (preferably at room temperature for easy spreading) Look for a wheel that is fresh and creamy, with a soft rind for best melting quality.
  • 1 cup cranberry sauce (homemade or store-bought) Make sure it's not too runny to prevent the crackers from becoming soggy.
  • 1 teaspoon fresh thyme leaves (optional for added flavor) Optional for extra flavor.
For the Filo Crackers
  • 10 sheets filo pastry (thawed if frozen) Ensure the pastry is thawed for easier handling.
  • ½ cup unsalted butter (melted, for brushing) Melted butter enhances the flavor and helps achieve a crispy texture.
  • Sea salt (for sprinkling) Use as needed for a touch of seasoning.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking.
  3. Layer the filo: Take one sheet of filo pastry and place it on a clean surface. Brush evenly with melted butter. Lay another sheet on top and brush again. Repeat this process until you have 5 layers.
  4. Add the filling: In the center of the layered filo, spread a generous layer of brie cheese, followed by a dollop of cranberry sauce. If using, sprinkle some fresh thyme leaves over the top of the cranberry sauce.
  5. Fold and cut: Fold the sides of the filo over the filling, creating a rectangle, then cut the cracker into squares.
  6. Brush with butter: Place the cut pieces on the prepared baking sheet. Brush the tops with additional melted butter and sprinkle with sea salt.
Cooking
  1. Bake in the preheated oven for about 18-20 minutes, or until golden brown and crisp.
  2. Once baked, remove from the oven and let cool for a few minutes before serving.

Notes

Tips: Use different cheeses for unique flavors, add nuts for crunch, and consider gluten-free options. These crackers are best enjoyed fresh, but can be stored in an airtight container for up to 2 days.
