Preparation
- Preheat your oven to 375°F (190°C).
- Prepare the baking sheet: Line a baking sheet with parchment paper to prevent sticking.
- Layer the filo: Take one sheet of filo pastry and place it on a clean surface. Brush evenly with melted butter. Lay another sheet on top and brush again. Repeat this process until you have 5 layers.
- Add the filling: In the center of the layered filo, spread a generous layer of brie cheese, followed by a dollop of cranberry sauce. If using, sprinkle some fresh thyme leaves over the top of the cranberry sauce.
- Fold and cut: Fold the sides of the filo over the filling, creating a rectangle, then cut the cracker into squares.
- Brush with butter: Place the cut pieces on the prepared baking sheet. Brush the tops with additional melted butter and sprinkle with sea salt.
Cooking
- Bake in the preheated oven for about 18-20 minutes, or until golden brown and crisp.
- Once baked, remove from the oven and let cool for a few minutes before serving.
