  • 4 oz brie cheese, cut into small pieces Choose good-quality brie.
  • 1 cup fresh or dried cranberries Fresh cranberries are preferable for a zesty twist.
  • 1 tablespoon honey (optional for added sweetness) Use if a sweeter stuffing is desired.
For the Chicken
  • 4 pieces boneless, skinless chicken breasts Pound to 1/2-inch thickness.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
For Garnish
  • 1 tablespoon fresh parsley, chopped (optional) For an appealing touch.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the brie pieces, cranberries, and honey (if using).
  3. Pound the chicken breasts to about 1/2-inch thickness using a meat mallet.
  4. Season both sides of the chicken breasts with salt, pepper, and garlic powder.
  5. Place a generous spoonful of the cranberry-brie mixture in the center of each chicken breast. Fold the sides over and secure with toothpicks or kitchen twine as needed.
Cooking
  1. In an oven-safe skillet, heat olive oil over medium-high heat. Sear each stuffed chicken breast for about 3-4 minutes per side, until golden brown.
  2. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  3. Remove from the oven and let rest for 5 minutes before serving.

Notes

Feel free to experiment with cheese types like goat cheese or cream cheese. For added flavor, incorporate fresh herbs like rosemary or thyme into the stuffing. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
