Ingredients
  

For the Chili Base
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fish or seafood stock
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
For the Seafood
  • 1 cup shrimp, peeled and deveined
  • 1 cup white fish (like cod or tilapia), cut into bite-sized pieces
  • 1 cup scallops (optional)
For the Creamy Element
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional toppings: chopped parsley or cilantro, lime wedges, shredded cheese

Method
 

Cooking
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and chopped bell pepper; cook for another 2-3 minutes until fragrant.
  3. Add the diced tomatoes (with their juices), seafood stock, chili powder, cumin, and smoked paprika. Stir to combine and let it come to a gentle simmer for about 10 minutes.
  4. Gently add the shrimp, white fish, and scallops (if using) into the pot. Cook for another 5-7 minutes, or until the seafood is opaque and cooked through.
  5. Lower the heat and stir in the heavy cream. Season with salt and pepper to taste. Continue to cook for another 2-3 minutes until warmed through and creamy.
  6. Remove from heat and let it sit for a few minutes before serving to allow the flavors to meld together.

Notes

Using fresh seafood is ideal for the best flavor, but frozen can be a convenient substitute. Just ensure they are thawed completely before cooking.
