- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and chopped bell pepper; cook for another 2-3 minutes until fragrant.
- Add the diced tomatoes (with their juices), seafood stock, chili powder, cumin, and smoked paprika. Stir to combine and let it come to a gentle simmer for about 10 minutes.
- Gently add the shrimp, white fish, and scallops (if using) into the pot. Cook for another 5-7 minutes, or until the seafood is opaque and cooked through.
- Lower the heat and stir in the heavy cream. Season with salt and pepper to taste. Continue to cook for another 2-3 minutes until warmed through and creamy.
- Remove from heat and let it sit for a few minutes before serving to allow the flavors to meld together.
Notes
Using fresh seafood is ideal for the best flavor, but frozen can be a convenient substitute. Just ensure they are thawed completely before cooking.
