Ingredients

For the Crispy Coating
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese Opt for fresh grated for best flavor
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
For the Pickles
  • 1 jar dill pickles (spears or slices, around 16 oz) Consider using fresh-picked pickles for a crunchier texture.
  • 2 large eggs, beaten
  • ½ cup all-purpose flour For gluten-free, replace with a gluten-free alternative.
  • Salt, to taste Optional

Method

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, paprika, and black pepper. Mix thoroughly until well combined.
  3. Set up a breading station by placing the beaten eggs in a shallow dish and the flour in another.
  4. Take each pickle slice and first dip it in the flour, shaking off the excess. Then, coat it in the beaten egg before finally dredging it in the breadcrumb mixture, pressing gently to ensure an even coating forms.
  5. Place the breaded pickles on the prepared baking sheet, ensuring they are evenly spaced.
Baking
  1. Bake in the preheated oven for 15-20 minutes, turning them halfway through until golden brown and crispy.
  2. Let them cool for a few minutes before serving warm with your favorite dipping sauce.

Notes

Consider incorporating crushed nuts or seeds into your Panko mixture for extra crunch. For a spicy kick, add cayenne pepper or chili powder to the breadcrumb mixture. Store leftovers in an airtight container for up to two days.
