Preparation
- Wash and dice the potatoes into bite-sized pieces.
- Slice the kielbasa and chop the onion, then set aside.
Mixing the Ingredients
- In a large bowl, combine the cream of chicken soup, sour cream, and half of the shredded cheese. Mix well for a smooth consistency.
Layering in the Crockpot
- In the bottom of the crockpot, layer half of the diced potatoes, followed by half of the sliced kielbasa and a sprinkle of onion if using.
- Pour half of the cream mixture over the first layer. Repeat with the remaining potatoes, kielbasa, and cream mixture.
- Season with salt and pepper and top with the remaining shredded cheese.
Cooking
- Cover and cook on low for about 6-7 hours or on high for 3-4 hours until the potatoes are tender and the cheese is melted.
- Stir gently before serving, and sprinkle with fresh parsley for a pop of color.
Notes
Cut potatoes evenly for even cooking. Experiment with different cheeses or add more vegetables for added nutrition.
