Ingredients
  

For the Dish
  • 2 pounds potatoes, diced (Yukon gold or russets) For creaminess
  • 1 pound kielbasa or smoked sausage, sliced
  • 1 can cream of chicken soup (10.5 ounces; or make your own for a healthier option)
  • 1 cup shredded cheddar cheese (sharp or mild, based on preference)
  • 1 cup sour cream (can substitute Greek yogurt)
  • 1 small onion, chopped (optional but recommended for added flavor)

For Garnish (Optional)
  • Fresh parsley, chopped
  • Extra cheese for topping

Method
 

Preparation
  1. Wash and dice the potatoes into bite-sized pieces.
  2. Slice the kielbasa and chop the onion, then set aside.
Mixing the Ingredients
  1. In a large bowl, combine the cream of chicken soup, sour cream, and half of the shredded cheese. Mix well for a smooth consistency.
Layering in the Crockpot
  1. In the bottom of the crockpot, layer half of the diced potatoes, followed by half of the sliced kielbasa and a sprinkle of onion if using.
  2. Pour half of the cream mixture over the first layer. Repeat with the remaining potatoes, kielbasa, and cream mixture.
  3. Season with salt and pepper and top with the remaining shredded cheese.
Cooking
  1. Cover and cook on low for about 6-7 hours or on high for 3-4 hours until the potatoes are tender and the cheese is melted.
  2. Stir gently before serving, and sprinkle with fresh parsley for a pop of color.

Notes

Cut potatoes evenly for even cooking. Experiment with different cheeses or add more vegetables for added nutrition.
