Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts fresh or thawed
  • Salt and pepper to taste
For the Sauce
  • 1 cup cranberry sauce store-bought or homemade
  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon onion powder
For Garnish (optional)
  • Fresh parsley chopped

Method
 

Preparation
  1. Season the chicken breasts liberally with salt and pepper and place them on the bottom of the crockpot.
Make the Sauce
  1. In a bowl, combine the cranberry sauce, apricot preserves, soy sauce, minced garlic, and onion powder. Stir until well mixed.
Combine Ingredients
  1. Pour the sauce mixture evenly over the chicken breasts in the crockpot.
Cook
  1. Cover the crockpot and set it on low for 6-7 hours, or on high for 3-4 hours. The chicken is ready when it easily shreds with a fork.
Serve
  1. Once cooked, shred the chicken right in the pot with two forks, allowing it to soak up the sauce for added flavor.
Garnish
  1. If desired, sprinkle freshly chopped parsley over the top before serving for a pop of color.

Notes

Use fresh ingredients for the best flavor. Adjust sweetness of the sauce as per your family's preferences. This dish can be made vegetarian by substituting chicken with chickpeas or tofu. Store leftovers in an airtight container.
