Preparation
- Preheat your waffle iron according to manufacturer instructions to ensure even cooking.
- In a large mixing bowl, sift together 1 1/2 cups flour, 1/3 cup cocoa powder, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. Mix until well combined.
- In another bowl, whisk together 2 eggs, 1 1/4 cups milk, 1/4 cup vegetable oil, and 1 teaspoon vanilla extract until fully blended.
- Pour the wet ingredients into the dry mixture and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
Cooking
- Grease the waffle iron lightly and pour the batter into the center of the iron (typically around 1/2 cup, but check your model's instructions).
- Close the lid and cook for 4-6 minutes or until the waffles are crispy and fully cooked. The steam should subside when they're done.
- While the waffles are cooking, prepare your whipped cream by beating 1 cup heavy whipping cream with 2 tablespoons powdered sugar until soft peaks form. Be cautious not to over-whip!
Serving
- Once the waffles are ready, serve them warm, topped with cherries and a generous dollop of whipped cream. Finish with a sprinkle of chocolate shavings or cocoa powder for that touch of luxury.
Notes
You can substitute cherries with diced strawberries or raspberries. For a dairy-free option, use a plant-based milk and coconut cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
