Ingredients

For the Waffles
  • 1.5 cups all-purpose flour Use freshly sifted flour for the best texture.
  • 1/3 cup unsweetened cocoa powder Opt for high-quality cocoa for a deeper chocolate flavor.
  • 2 tablespoons sugar Adjust the amount based on your sweetness preference.
  • 1 tablespoon baking powder Ensure it’s fresh for the perfect rise.
  • 1/2 teaspoon salt A balanced flavor enhancer.
  • 2 large eggs Room temperature eggs whip up better.
  • 1.25 cups milk Alternatively, you can use almond milk for a dairy-free option.
  • 1/4 cup vegetable oil or melted butter Adds richness to your waffles.
  • 1 teaspoon vanilla extract Use pure vanilla for a more aromatic flavor.
For the Toppings
  • 1 cup pitted cherries (fresh or frozen) If using frozen, thaw them first for best results.
  • 1 cup heavy whipping cream Chill the cream for easier whipping.
  • 2 tablespoons powdered sugar Adjust for sweetness in the whipped cream.
  • Chocolate shavings or cocoa powder For garnish, adding a touch of elegance.

Method

Preparation
  1. Preheat your waffle iron according to manufacturer instructions to ensure even cooking.
  2. In a large mixing bowl, sift together 1 1/2 cups flour, 1/3 cup cocoa powder, 2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. Mix until well combined.
  3. In another bowl, whisk together 2 eggs, 1 1/4 cups milk, 1/4 cup vegetable oil, and 1 teaspoon vanilla extract until fully blended.
  4. Pour the wet ingredients into the dry mixture and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
Cooking
  1. Grease the waffle iron lightly and pour the batter into the center of the iron (typically around 1/2 cup, but check your model's instructions).
  2. Close the lid and cook for 4-6 minutes or until the waffles are crispy and fully cooked. The steam should subside when they're done.
  3. While the waffles are cooking, prepare your whipped cream by beating 1 cup heavy whipping cream with 2 tablespoons powdered sugar until soft peaks form. Be cautious not to over-whip!
Serving
  1. Once the waffles are ready, serve them warm, topped with cherries and a generous dollop of whipped cream. Finish with a sprinkle of chocolate shavings or cocoa powder for that touch of luxury.

Notes

You can substitute cherries with diced strawberries or raspberries. For a dairy-free option, use a plant-based milk and coconut cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
