For the Filling
  • 2 cups cooked chicken, shredded great for using leftovers
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup chicken broth (low-sodium for healthier options)
  • 1 cup cream of chicken soup (can substitute with homemade version or gluten-free substitute)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
For the Topping
  • 1 cup biscuit mix (the kind you just add water to; can use gluten-free)
  • 1/2 cup milk (dairy or plant-based)
  • 1/2 cup shredded cheddar cheese (optional for extra flavor)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) while you prepare the filling.
  2. In a large bowl, combine the shredded chicken, frozen mixed vegetables, chicken broth, cream of chicken soup, garlic powder, onion powder, dried thyme, and seasoning. Stir until well mixed.
  3. Pour the filling mixture into a greased 9x13-inch casserole dish, spreading it evenly across the bottom.
  4. In a separate bowl, combine the biscuit mix, milk, and shredded cheddar cheese (if using). Mix until just combined.
  5. Dollop the biscuit mixture over the filling, spreading it to cover as much of the surface as possible.
Cooking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
  2. Once done, let the casserole cool for about 10 minutes before serving.

Notes

Letting the casserole cool for a few minutes enhances flavor and makes serving easier. You can also make this dish vegetarian by using plant-based chicken substitutes.
