Ingredients
  

For the Base
  • 1 cup rolled oats Use certified gluten-free oats if needed.
  • ½ cup almond butter Can substitute with any nut butter of choice.
  • ¼ cup pure pumpkin puree
  • ¼ cup maple syrup
For the Flavor
  • 1 teaspoon pumpkin spice Or substitute with a mix of cinnamon, nutmeg, and clove.
  • 1 teaspoon vanilla extract
  • a pinch salt
Optional Add-ins
  • ¼ cup dark chocolate chips or dried cranberries
  • 2 tablespoons chia seeds or flaxseeds

Method
 

Preparation
  1. In a large mixing bowl, combine rolled oats, almond butter, pumpkin puree, and maple syrup.
  2. Add in pumpkin spice, vanilla extract, and a pinch of salt.
  3. Using a spoon or your hands, mix thoroughly until the mixture is sticky and holds together. If desired, fold in optional add-ins.
  4. Refrigerate the mixture for about 30 minutes to firm up slightly.
  5. Once combined, roll the mixture into small bite-sized balls, about 1 inch in diameter.
  6. Place the energy bites on a lined baking sheet or plate and return to the fridge for another 15-20 minutes to set completely.

Notes

For a crunchier texture, consider adding chopped nuts or seeds. For extra sweetness, drizzle honey or agave nectar into the mixture. Store in an airtight container to maintain freshness; they can be frozen for longer storage.
