- In a large mixing bowl, combine rolled oats, almond butter, pumpkin puree, and maple syrup.
- Add in pumpkin spice, vanilla extract, and a pinch of salt.
- Using a spoon or your hands, mix thoroughly until the mixture is sticky and holds together. If desired, fold in optional add-ins.
- Refrigerate the mixture for about 30 minutes to firm up slightly.
- Once combined, roll the mixture into small bite-sized balls, about 1 inch in diameter.
- Place the energy bites on a lined baking sheet or plate and return to the fridge for another 15-20 minutes to set completely.
Notes
For a crunchier texture, consider adding chopped nuts or seeds. For extra sweetness, drizzle honey or agave nectar into the mixture. Store in an airtight container to maintain freshness; they can be frozen for longer storage.
