Ingredients
  

For the Chicken Filling
  • 2 cups cooked chicken breast, shredded Use leftover rotisserie chicken for a time-saving shortcut.
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
For the Veggies
  • 1 bell pepper, sliced (any color you prefer)
  • 1 onion, thinly sliced
  • 1 tablespoon lime juice
  • Optional: fresh cilantro for garnish
For Assembly
  • 4 large flour tortillas Can use corn tortillas for a gluten-free option.
  • 2 cups shredded cheddar cheese Or your favorite cheese.
  • Cooking spray or additional olive oil for the pan

Method
 

Preparation
  1. In a medium bowl, combine the shredded chicken with olive oil, cumin, paprika, chili powder, salt, and pepper. Toss to coat evenly.
Sauté the Veggies
  1. In a large skillet over medium heat, add a splash of olive oil. Once hot, toss in the sliced bell pepper and onion. Sauté for about 5-7 minutes, or until the veggies are softened and slightly caramelized. Add the lime juice and mix well.
Combine Ingredients
  1. In the same skillet, stir the chicken mixture into the sautéed veggies. Cook for an additional 2-3 minutes until heated through. Remove from heat.
Assemble the Quesadillas
  1. Heat a clean skillet over medium heat and lightly grease it with cooking spray or olive oil. Place one tortilla in the skillet, sprinkle one-fourth of the cheese evenly over the tortilla. Add one-fourth of the chicken and veggie mixture on top of the cheese, then sprinkle with another layer of cheese before folding the tortilla in half.
Cook Until Crisp
  1. Cook for about 3-4 minutes per side, or until the tortilla is golden brown and crispy, and the cheese has melted. Remove from the skillet and repeat with the remaining tortillas and filling.
Slice and Serve
  1. Once all quesadillas are cooked, slice them into wedges and serve immediately with your favorite dips like salsa, guacamole, or sour cream.

Notes

Customize Your Fillings: Try adding black beans, corn, or jalapeños for extra flavor and texture. Make It Veggie: Substitute the chicken with sautéed mushrooms, zucchini, or tofu for a delicious vegetarian option. Low-Carb Twist: Use lettuce wraps instead of tortillas for a low-carb meal. Store leftover quesadillas in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat until warmed through.
