Ingredients
  

For the Dough
  • 2 1/4 teaspoons active dry yeast 1 packet
  • 1 tablespoon granulated sugar
  • 1 cup warm water 105 to 115°F / 40 to 46°C
  • 2 1/2 to 3 cups all-purpose flour plus extra for dusting
  • 1 teaspoon fine sea salt
  • 2 tablespoons unsalted butter melted and cooled
For the Baking Soda Bath
  • 4 cups water
  • 2/3 cup baking soda helps create that classic pretzel crust
For the Topping
  • 1 large egg beaten with 1 tablespoon water (egg wash for shine)
  • 1 tablespoon coarse sea salt or pretzel salt, to taste
  • 2 tablespoons melted butter for brushing (optional, adds richness)

Method
 

Preparation
  1. In a medium bowl, whisk together warm water, sugar, and yeast. Let sit until foamy and bubbly, about 5 to 10 minutes.
  2. Stir in melted butter, 2 1/2 cups flour, and salt. Mix until a shaggy dough forms.
  3. Turn onto a lightly floured surface and knead for 5 to 8 minutes, adding up to 1/2 cup more flour as needed.
  4. Place dough in a lightly oiled bowl, cover with a clean towel or plastic wrap, and let rise in a warm spot until doubled in size, about 30 to 45 minutes.
Shaping and Boiling
  1. Punch the dough down and divide into 8 equal pieces. Roll each piece into a long rope about 12 inches long, then cut into 1-inch pieces.
  2. In a wide shallow pot, bring 4 cups of water and baking soda to a simmer.
  3. Working in batches, drop pretzel bites into the simmering baking soda bath for about 15 to 30 seconds.
  4. Remove with a slotted spoon and drain briefly on a wire rack.
Baking
  1. Place bites on a parchment-lined tray. Brush each lightly with egg wash and sprinkle with coarse salt.
  2. Preheat the air fryer to 375°F / 190°C for 3 minutes. Arrange pretzel bites in a single layer; cook in batches if needed.
  3. Air fry for 6 to 8 minutes, turning once halfway through, until golden brown and crisp on the outside.
  4. Brush with melted butter and serve warm.

Notes

Use room temperature ingredients for even yeast activity. For a gluten-free version, use a high-quality gluten-free all-purpose flour blend.
