  • 10 slices cheddar cheese (or any slice of cheese on top) Feel free to use any cheese of your choice.
  • 2 cups spinach (optional, for a little extra nutrition) Add for extra nutrients and flavor.
Optional Add-Ins
  • 1 fruit avocado Can be added for extra creaminess and flavor.

Preparation
  1. Preheat the oven and grease a baking dish for the eggs.
  2. Whisk the eggs with a splash of milk for fluffiness.
  3. Pour the egg mixture into the prepared baking dish and bake until set.
  4. Let baked eggs cool then cut into rounds to fit on English muffins.
  5. Toast the English muffins until lightly golden.
Assembly
  1. Start with a toasted English muffin.
  2. Add a slice of cheese as a moisture barrier.
  3. Place an egg round and a sausage patty on top.
  4. Wrap each sandwich tightly in parchment paper and then in foil or a freezer-safe bag.
Storage
  1. Label each sandwich with the date and freeze for up to 1-2 months.
Reheating
  1. To reheat, use a microwave (30-60 seconds) with a paper towel.
  2. Alternately, use an oven at 350°F for 10-15 minutes for a crispier sandwich.
