  • 3 large large eggs
  • ½ cup granulated sugar (adjust to taste) Reduce for a less sweet option or use a sugar substitute.
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour (or almond flour for a gluten-free option)
  • 1 teaspoon baking powder
  • a pinch salt
For the Garnish
  • Powdered sugar (for dusting)
  • A sprinkle of cinnamon (optional for added warmth)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a round cake pan or line it with parchment paper for easy release.
  2. Peel the apples and slice them thinly, aiming for translucent slices about 1/8 inch thick.
  3. In a large mixing bowl, whisk together the eggs and sugar until light and frothy (about 3-4 minutes).
  4. Add the vanilla extract, baking powder, and a pinch of salt to the egg mixture. Stir well to combine.
  5. Gradually fold in the flour until just combined, being careful not to overmix.
  6. Gently fold the apple slices into the batter, ensuring they are evenly coated.
  7. Pour the mixture into the prepared cake pan.
Baking
  1. Bake for 40-45 minutes or until the top is slightly golden and a toothpick inserted in the center comes out clean.
  2. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.
  3. Dust with powdered sugar before serving.
