Ingredients
  

For the Cake
  • 1 cup unsalted butter, softened to room temperature Use high-quality butter for best flavor.
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup whole milk, room temperature Can be substituted with almond or oat milk.
Optional Toppings
  • Powdered sugar, for dusting
  • Fresh berries or whipped cream, for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3-5 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract until well combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt.
Mixing the Batter
  1. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the flour mixture, mixing each addition just until combined. Do not overmix.
Baking
  1. Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. Dust the cooled cake with powdered sugar and serve with fresh berries or whipped cream if desired.

Notes

Store leftovers in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. To reheat, warm individual slices in the microwave for a few seconds. For a delightful twist, experiment with lemon or almond extract or fold in chocolate chips or nuts.
