Ingredients

For the Cake
  • 3 pieces ripe bananas (about 1 1/2 cups mashed) Use bananas with dark spots for optimal sweetness.
  • 1/2 cup unsalted butter, softened (room temperature) Softened butter is essential for creaming.
  • 1 cup granulated sugar Adjust according to taste.
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
For the Cream Cheese Frosting (optional)
  • 8 oz cream cheese, softened (room temperature)
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas until smooth and creamy. You can use a fork or a potato masher—aim for about 1 1/2 cups.
  3. In another bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract. Mix well until everything is combined.
  5. Gradually add the mashed bananas to the butter mixture, stirring until just combined.
  6. In a separate bowl, whisk together the baking soda, baking powder, salt, and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Frosting
  1. For the cream cheese frosting (if using), beat the softened cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar and vanilla, blending until creamy and spreadable.
  3. Once the cake is cool, spread the cream cheese frosting evenly over the top. Slice, serve, and enjoy!

Notes

This cake can be enjoyed plain or elevated with cream cheese frosting. For extra flavor, consider adding a teaspoon of cinnamon or nutmeg to the batter. You can fold in walnuts, chocolate chips, or dried fruit for an exciting twist. Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
