Ingredients
  

For the Dough
  • 1 pound fresh pizza dough store-bought or homemade; freshly made gives the best texture
  • 2 tablespoons olive oil for brushing
For the Filling
  • 1 cup shredded mozzarella cheese freshly grated melts beautifully
  • 1/2 cup grated Parmesan cheese more for sprinkling later
  • 2 cloves garlic minced; adjust to your taste
  • 1 teaspoon dried oregano or Italian seasoning for a twist
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly cracked adds more flavor
For Topping
  • 2 tablespoons chopped fresh parsley optional for garnish
  • Extra as needed melted butter for brushing; for added richness

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a small bowl, mix together the mozzarella cheese, Parmesan cheese, minced garlic, oregano, salt, and pepper until well combined.
  3. Roll out your pizza dough on a lightly floured surface into a large rectangle, about 1/4 inch thick. Aim for an even shape to ensure uniform rolls.
  4. Carefully spread the cheese mixture evenly over the rolled-out dough, leaving about a half-inch border all around the edges.
  5. Starting from the longest side, roll the dough tightly into a log, using your hands to maintain a tight seal. Pinch the edges to seal, ensuring no filling escapes during baking.
  6. Slice the log into bite-sized pieces, approximately 1 to 1.5 inches wide, and arrange them cut-side up on your prepared baking sheet.
  7. Brush the tops with olive oil and sprinkle with additional Parmesan cheese for a crispy crust.
Baking
  1. Bake in your preheated oven for 15-20 minutes or until golden brown and cheese is bubbly, watching for the perfect golden hue.
  2. Remove from the oven and brush with melted butter. Garnish with fresh parsley, if desired.
  3. Allow to cool slightly before serving them warm perfect for sharing!

Notes

For an extra kick, add a pinch of red pepper flakes to the filling mixture. Feel free to experiment with your favorite toppings in the filling, such as pepperoni, bell peppers, or spinach. These rolls can be made ahead of time and frozen. Just unroll the dough and prepare the filling. Wrap tightly in foil before freezing, then bake directly from the freezer; just add extra baking time.
