Ingredients
  

For the Banana Bread
  • 3 pieces ripe bananas The riper, the better for sweetness.
  • 1 cup Greek yogurt Plain, full-fat for richness.
  • 1/3 cup honey or maple syrup For natural sweetness.
  • 2 large eggs Large eggs are ideal.
  • 1 teaspoon vanilla extract For flavor enhancement.
For the Dry Ingredients
  • 1 ½ cups all-purpose flour Can substitute with whole wheat or gluten-free if desired.
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
Optional Add-Ins
  • ½ cup walnuts or pecans Chopped, for added crunch.
  • ½ cup dark chocolate chips For a sweet twist.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large bowl, mash the ripe bananas with a fork until smooth but slightly chunky for texture.
  3. Add the Greek yogurt, honey or maple syrup, eggs, and vanilla extract to the bowl. Whisk until everything is well combined.
  4. In another bowl, combine the flour, baking soda, baking powder, and salt. Whisk together until evenly mixed.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  6. If you’re using any optional add-ins like walnuts or chocolate chips, fold them into the batter at this point.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden and slightly domed.
  9. Remove from the oven and allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to three days or freeze slices for later enjoyment. You can add spices like cinnamon or nutmeg for extra flavor.
