Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, bell pepper, taco seasoning, and salsa. Stir well until everything is evenly mixed.
  3. Spread the chicken mixture evenly into a greased 9x13 inch baking dish.
  4. Sprinkle the shredded cheese generously on top of the chicken mixture.
Baking
  1. Cover the casserole with aluminum foil and place in the preheated oven. Bake for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and starting to turn golden brown.
Serving
  1. Let it cool for a few minutes before serving.

Notes

Use leftover turkey instead of chicken for a post-holiday twist. Make it vegetarian by omitting chicken and using additional beans or lentils. For a low-carb option, substitute cauliflower rice for the beans. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain texture. Prepare ahead of time by assembling the casserole up to a day before and storing it covered in the refrigerator.
