Preparation
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, bell pepper, taco seasoning, and salsa. Stir well until everything is evenly mixed.
- Spread the chicken mixture evenly into a greased 9x13 inch baking dish.
- Sprinkle the shredded cheese generously on top of the chicken mixture.
Baking
- Cover the casserole with aluminum foil and place in the preheated oven. Bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbling and starting to turn golden brown.
Serving
- Let it cool for a few minutes before serving.
Notes
Use leftover turkey instead of chicken for a post-holiday twist. Make it vegetarian by omitting chicken and using additional beans or lentils. For a low-carb option, substitute cauliflower rice for the beans. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain texture. Prepare ahead of time by assembling the casserole up to a day before and storing it covered in the refrigerator.
