  • 1 medium ripe avocado, peeled and pitted Ensure it's perfectly ripe for a silky smooth texture.
  • 1 medium banana, ripe for the sweetest flavor You can swap with unsweetened applesauce for an alternative flavor.
  • 1/4 cup unsweetened cocoa powder For rich chocolate flavor.
  • 1/4 cup maple syrup Can be replaced with agave syrup for a vegan option.
  • 1 teaspoon vanilla extract For depth of flavor.
  • 1 pinch salt To enhance sweetness.
For Garnish
  • to taste Fresh berries (like strawberries or raspberries) Add for a pop of color and additional nutrients.
  • to taste Whipped coconut cream Optional, for a decadent touch.

Method
 

Preparation
  1. In a blender, combine the ripe avocado, banana, cocoa powder, maple syrup, vanilla extract, and salt.
  2. Blend on high until the mixture is smooth and creamy, scraping down the sides as necessary. This should take about 1-2 minutes.
  3. Give the pudding a taste. If you prefer a sweeter flavor, add more maple syrup until it reaches your desired sweetness. Blend again to incorporate.
  4. Transfer the pudding into a serving bowl or individual cups. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the pudding to thicken slightly.
  5. Once chilled, stir the pudding gently to rehydrate it slightly and serve garnished with fresh berries and a dollop of whipped coconut cream if desired.

Notes

For a smoother pudding, strain the mixture through a fine-mesh sieve to remove any bits of avocado. This recipe stores well in the fridge and can be made up to 3 days in advance.
