- In a blender, combine the ripe avocado, banana, cocoa powder, maple syrup, vanilla extract, and salt.
- Blend on high until the mixture is smooth and creamy, scraping down the sides as necessary. This should take about 1-2 minutes.
- Give the pudding a taste. If you prefer a sweeter flavor, add more maple syrup until it reaches your desired sweetness. Blend again to incorporate.
- Transfer the pudding into a serving bowl or individual cups. Cover with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the pudding to thicken slightly.
- Once chilled, stir the pudding gently to rehydrate it slightly and serve garnished with fresh berries and a dollop of whipped coconut cream if desired.
Notes
For a smoother pudding, strain the mixture through a fine-mesh sieve to remove any bits of avocado. This recipe stores well in the fridge and can be made up to 3 days in advance.
