Preparation
- Preheat the oven to 375°F (190°C).
- Season both sides of the chicken breasts with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
Cooking
- Once the oil is hot, add the chicken breasts to the skillet. Cook for 5-6 minutes on each side, or until browned.
- While the chicken cooks, combine the crumbled feta, hot honey, lemon juice, minced garlic, dried oregano, and paprika in a bowl. Stir until well blended.
- Once the chicken is browned, pour the honey feta mixture evenly over the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
Serving
- Remove from the oven, let it rest for a few minutes, and serve warm.
Notes
For a lower-carb version, consider serving the chicken over sautéed spinach or zucchini noodles. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently in the oven.
