Hot Honey Feta Chicken

Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
For the Honey Feta Sauce
  • 1 cup feta cheese, crumbled Opt for artisanal feta for authentic flavor.
  • 1/4 cup hot honey (or regular honey mixed with chili flakes for a DIY version) Adjust spice level as per preference.
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
Cooking
  1. Once the oil is hot, add the chicken breasts to the skillet. Cook for 5-6 minutes on each side, or until browned.
  2. While the chicken cooks, combine the crumbled feta, hot honey, lemon juice, minced garlic, dried oregano, and paprika in a bowl. Stir until well blended.
  3. Once the chicken is browned, pour the honey feta mixture evenly over the chicken in the skillet.
  4. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
Serving
  1. Remove from the oven, let it rest for a few minutes, and serve warm.

Notes

For a lower-carb version, consider serving the chicken over sautéed spinach or zucchini noodles. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently in the oven.
