Sandwich Essentials
  • 8 slices sandwich bread (white or Italian-style) Classic white works great, sourdough adds character.
  • 8 slices provolone cheese Deli-sliced recommended for melting.
  • 4 oz Genoa salami Adds classic Italian sub flavor.
  • 4 oz prosciutto Delicate texture that melts well.
  • 2 oz pepperoni Adds a spicy touch.
  • 0.5 cup fresh basil leaves Optional, adds herby freshness.
  • 2 tbsp unsalted butter For toasting the sandwich.
Optional Giardiniera (DAD ADD)
  • 1 cup hot pickled cauliflower, chopped Adds tangy crunch.
  • 0.5 cup Castelvetrano olives, chopped Can use green pimento olives.
  • 0.25 cup banana peppers, sliced For extra flavor.

Method
 

Preparation
  1. Stir together chopped cauliflower, olives, and peppers in a bowl for the olive mix (optional). Set aside.
  2. On one slice of bread, layer provolone, a mix of cured meats, fresh basil, and another slice of provolone. Top with a second bread slice and press gently.
Cooking
  1. Melt butter in a skillet over medium-low heat.
  2. Place sandwich in the skillet, flipping quickly to coat both sides with butter. Cook each side for about 3–4 minutes until golden brown and cheese is melty.
Serving
  1. Slice on the diagonal and serve immediately with chips, salad, or the optional giardiniera.

Notes

This recipe allows for flexibility in meats and cheeses. Make it vegetarian by doubling the cheese and adding veggies. Store leftovers in the fridge for up to 2 days.
