Preparation
- Stir together chopped cauliflower, olives, and peppers in a bowl for the olive mix (optional). Set aside.
- On one slice of bread, layer provolone, a mix of cured meats, fresh basil, and another slice of provolone. Top with a second bread slice and press gently.
Cooking
- Melt butter in a skillet over medium-low heat.
- Place sandwich in the skillet, flipping quickly to coat both sides with butter. Cook each side for about 3–4 minutes until golden brown and cheese is melty.
Serving
- Slice on the diagonal and serve immediately with chips, salad, or the optional giardiniera.
Notes
This recipe allows for flexibility in meats and cheeses. Make it vegetarian by doubling the cheese and adding veggies. Store leftovers in the fridge for up to 2 days.
