Ingredients
  

For the Casserole
  • 1 pound ground beef or turkey Choose lean meat for a healthier option
  • 1 small onion, diced
  • 1 bell pepper diced Any color you prefer
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning Or use homemade seasoning
  • 2 cups shredded cheddar cheese Or a mix of your favorites
For the Topping
  • 1 bag (32 oz) frozen tater tots Use a brand with no preservatives for freshness
Optional Garnishes
  • Fresh cilantro, chopped
  • Sliced jalapeños
  • Sour cream or Greek yogurt
  • Sliced avocado

Method
 

Preparation & Cooking
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef or turkey. Cook until browned, about 5-7 minutes. Make sure to break it apart using a spatula for even cooking.
  3. Add the diced onion and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables soften and become fragrant.
  4. Stir in the black beans, corn, diced tomatoes (with their juices), and taco seasoning. Mix well and let it cook for an additional 5 minutes, allowing the flavors to meld together.
  5. In a greased 9x13-inch casserole dish, spread the meat mixture evenly across the bottom.
  6. Top the meat mixture with shredded cheddar cheese.
  7. Carefully layer the frozen tater tots atop the cheese, arranging them evenly to cover the entire surface.
  8. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden and crispy, and the cheese is melted and bubbly.
  9. Once done, remove from the oven and allow it to cool slightly before serving.

Notes

For a vegetarian version, substitute the ground meat with sautéed mushrooms, zucchini, or a bean mix. Add some chopped fresh jalapeños or a sprinkle of cayenne pepper for an extra kick. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or you can freeze the casserole before baking for a quick meal later.
