Ingredients
  

For the Base and Topping
  • 1 cup rolled oats Use gluten-free oats for a gluten-free version
  • 1 cup all-purpose flour Can substitute with a gluten-free flour blend
  • ½ cup brown sugar Lightly packed for optimal sweetness
  • ½ cup unsalted butter Softened; can substitute with coconut oil for dairy-free
  • ½ teaspoon salt
  • ½ teaspoon cinnamon Can add a pinch of nutmeg for extra warmth
For the Filling
  • 2 cups pitted dates Chopped; fresh dates work best
  • 1 cup water
  • 1 teaspoon vanilla extract Use pure vanilla for better flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a large bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon. Mix well to ensure the dry ingredients are evenly distributed.
  3. Add the softened butter into the dry mixture. With a fork or your hands, blend until it resembles coarse crumbs. Reserve half of this mixture for the topping.
Cooking
  1. In a saucepan over medium heat, combine the chopped dates and water. Stir until the mixture starts to simmer, then reduce the heat to low and cook for about 5-7 minutes, or until the dates break down into a thick paste. Remove from heat and stir in vanilla extract.
  2. Spread the remaining oat mixture evenly into the bottom of your prepared baking dish. Press firmly to create a solid base.
  3. Spread the date filling over the base in an even layer, then sprinkle the reserved oat mixture on top. Press it down gently to ensure it sticks.
  4. Bake for 25-30 minutes or until the top is golden brown. Allow it to cool in the dish for at least 10 minutes before slicing into squares.
  5. Enjoy your beautiful squares warm or at room temperature.

Notes

Use different nuts like chopped walnuts or pecans for added crunch. Add a splash of orange zest or almond extract for a twist. Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. These squares freeze beautifully and can be kept for about 3 months when wrapped tightly.
