Preparation
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a large bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon. Mix well to ensure the dry ingredients are evenly distributed.
- Add the softened butter into the dry mixture. With a fork or your hands, blend until it resembles coarse crumbs. Reserve half of this mixture for the topping.
Cooking
- In a saucepan over medium heat, combine the chopped dates and water. Stir until the mixture starts to simmer, then reduce the heat to low and cook for about 5-7 minutes, or until the dates break down into a thick paste. Remove from heat and stir in vanilla extract.
- Spread the remaining oat mixture evenly into the bottom of your prepared baking dish. Press firmly to create a solid base.
- Spread the date filling over the base in an even layer, then sprinkle the reserved oat mixture on top. Press it down gently to ensure it sticks.
- Bake for 25-30 minutes or until the top is golden brown. Allow it to cool in the dish for at least 10 minutes before slicing into squares.
- Enjoy your beautiful squares warm or at room temperature.
Notes
Use different nuts like chopped walnuts or pecans for added crunch. Add a splash of orange zest or almond extract for a twist. Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. These squares freeze beautifully and can be kept for about 3 months when wrapped tightly.
