Ingredients
  

For the Chili Base
  • 1 can (15 oz) chili beans in sauce
  • 1 can (15 oz) diced tomatoes with or without green chilies for heat
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Macaroni
  • 2 cups elbow macaroni or any pasta of your choice
  • 4 cups vegetable or chicken broth
  • 1 cup shredded cheddar cheese optional for topping

Preparation
  1. In a large pot, combine the chili beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Stir everything together over medium heat, allowing the spices to blend (about 3-4 minutes).
  2. Add the 4 cups of broth to the pot and bring the mixture to a gentle boil.
  3. Once boiling, stir in the 2 cups of macaroni. Reduce the heat and let it simmer uncovered for 8-10 minutes or until the macaroni is tender, stirring occasionally to prevent sticking.
  4. Once cooked, remove the pot from heat and stir in the shredded cheddar cheese if using, allowing it to melt into the dish.
  5. Check seasoning and add more salt or pepper as needed. Serve hot, and enjoy the comforting mix of flavors!

Notes

Leftovers store well in an airtight container for up to 3 days in the fridge. Reheat on the stove or microwave until warmed through. This dish can be customized with various toppings and sides.
