Ritz Cracker Caramel Treats

Ingredients
  

For the Base
  • 30 crackers 1 box of Ritz crackers (about 30 crackers) Crispy and salty base.
  • 1 cup 1 cup of unsalted butter (or margarine) Using high-quality butter will elevate the flavor.
For the Caramel
  • 1 cup 1 cup of packed brown sugar
  • 1 cup 1 cup of light corn syrup Can be substituted with honey or maple syrup.
  • 1 teaspoon 1 teaspoon of vanilla extract
Optional Toppings
  • 1 cup 1 cup of chocolate chips For chocolate lovers.
  • 0.5 cup ½ cup of chopped nuts (like pecans or walnuts) Add for extra crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking dish (about 9×13 inches) with parchment paper or aluminum foil.
  3. Place a single layer of Ritz crackers on the bottom of the prepared baking dish.
Making the Caramel
  1. In a medium saucepan over medium heat, combine the butter, brown sugar, and corn syrup. Stir continuously until it comes to a gentle boil.
  2. Once boiling, let it cook for 3-4 minutes without stirring until it thickens slightly.
  3. Remove from heat and stir in the vanilla extract.
Assembly
  1. Immediately pour the caramel mixture over the layer of crackers, spreading it evenly with a spatula.
  2. Layer another set of Ritz crackers over the caramel, gently pressing them down.
Baking
  1. Bake in the preheated oven for about 10-12 minutes until the top is golden and bubbly.
  2. Allow to cool completely before lifting out and cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to a week. Treats can be made a day in advance and stored, or frozen for up to 2 months.
