Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking dish (about 9×13 inches) with parchment paper or aluminum foil.
- Place a single layer of Ritz crackers on the bottom of the prepared baking dish.
Making the Caramel
- In a medium saucepan over medium heat, combine the butter, brown sugar, and corn syrup. Stir continuously until it comes to a gentle boil.
- Once boiling, let it cook for 3-4 minutes without stirring until it thickens slightly.
- Remove from heat and stir in the vanilla extract.
Assembly
- Immediately pour the caramel mixture over the layer of crackers, spreading it evenly with a spatula.
- Layer another set of Ritz crackers over the caramel, gently pressing them down.
Baking
- Bake in the preheated oven for about 10-12 minutes until the top is golden and bubbly.
- Allow to cool completely before lifting out and cutting into squares.
Notes
Store leftovers in an airtight container at room temperature for up to a week. Treats can be made a day in advance and stored, or frozen for up to 2 months.
