For the Sausage Balls
  • 1 pound breakfast sausage choose your preferred level of spiciness
  • 1 cup shredded cheese cheddar or pepper jack works beautifully
  • 1 can Rotel diced tomatoes with green chilies 10 oz, drained
  • 8 oz cream cheese softened
  • 2 cups biscuit mix like Bisquick
  • 1 teaspoon garlic powder optional
  • 1 teaspoon onion powder optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large bowl, combine the softened cream cheese, breakfast sausage, drained Rotel tomatoes, and shredded cheese. Mix well until everything is evenly coated.
  3. Add in the biscuit mix, garlic powder, and onion powder if using. Stir the mixture until everything is well combined. You may need to use your hands to get a good mix.
  4. Shape the mixture into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, leaving space between each ball.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until they are golden brown and cooked through.
  2. Allow the sausage balls to cool for a few minutes on the baking sheet before transferring them to a serving platter.

Notes

For best flavor, use high-quality sausage and fresh cheese. You can prepare the mixture a day in advance and store it in the fridge. These sausage balls freeze beautifully! Experiment with different cheeses or spice levels based on your preferences.
